Abstract

Praktik Kerja Industri Pengolahan Pangan (PKIPP) merupakan salah satu kegiatan akademik yang bertujuan untuk mengaplikasikan teori yang diperoleh selama perkuliahan dalam dunia kerja nyata. Kegiatan ini dilaksanakan di PT. Perkebunan Nusantara I Regional 5, Kebun Wonosari, Malang, yang merupakan Perusahaan yang berfokus pada bidang perkebunan yang memproduksi berbagai jenis teh, termasuk teh hitam CTC (Crushing, Tearing, Curling). Tujuan dari pelaksanaan PKIPP ini adalah untuk memahami proses produksi teh hitam CTC mulai dari pemetikan bahan baku, pelayuan, penggilingan, oksidasi enzimatis, pengeringan, penyortiran, hingga pengemasan dan distribusi. Mahasiswa juga mempelajari sistem manajemen mutu, sanitasi, pengelolaan limbah, serta struktur organisasi dan manajemen personalia perusahaan. Metode pelaksanaan kegiatan meliputi observasi langsung, wawancara dengan staf teknis dan manajemen, serta praktik kerja di lapangan. Berdasarkan hasil PKIPP, diketahui bahwa PT. Perkebunan Nusantara I Regional 5 telah menerapkan sistem produksi dengan tata letak produk (product layout) yang efisien, serta telah memperoleh sertifikasi HACCP dan Rainforest Alliance sebagai bukti kepatuhan terhadap standar mutu dan keberlanjutan lingkungan. Produksi teh hitam CTC di PTPN I Regional 5 menunjukkan fluktuasi yang dipengaruhi oleh faktor cuaca dan kapasitas bahan baku. Melalui PKIPP ini, mahasiswa memperoleh pengalaman langsung dalam industri pengolahan pangan dan pemahaman menyeluruh tentang proses produksi teh secara profesional
