Abstract

Praktik Kerja Industri Pengolahan Pangan (PKIPP) dilaksanakan di PT Sinar Mas Agro Resources and Technology Tbk., Surabaya pada tanggal 3 Februari–27 Februari 2026 dengan tujuan mempelajari proses pengolahan Crude Palm Oil (CPO) menjadi minyak goreng dan margarin serta memahami penerapan sistem pengendalian mutu, keamanan pangan, sanitasi, pengolahan limbah, dan keselamatan serta kesehatan kerja di industri. Metode yang digunakan meliputi observasi langsung, wawancara dengan pembimbing lapangan dan karyawan, serta studi pustaka. Hasil kegiatan menunjukkan bahwa proses produksi diawali dengan pengujian mutu CPO, kemudian dilanjutkan dengan proses refining melalui tahapan degumming, bleaching, dan deodorizing untuk menghasilkan Refined Bleached and Deodorized Palm Oil (RBDPO). Selanjutnya dilakukan proses fraksinasi untuk menghasilkan olein dan stearin, sedangkan sebagian produk diproses melalui hidrogenasi untuk menghasilkan margarin dan specialty fat. Seluruh proses didukung oleh penerapan Good Manufacturing Practices (GMP), Hazard Analysis and Critical Control Points (HACCP), ISO 9001, ISO 22000, dan Sistem Manajemen Keselamatan dan Kesehatan Kerja (SMK3). Kegiatan PKIPP memberikan pemahaman mengenai proses pengolahan minyak sawit, pengendalian mutu, keamanan pangan, dan penerapan teknologi pangan dalam industri.
